Quiche Filling

Ingredients

3-4 eggs

3-4 oz cheese

1 c. whole milk

1/2 tsp. black pepper

1/4 tsp. nutmeg

1/2 tsp. salt

2 tsp. olive oil

1 onion

1/4-1/2 lb. other vegetables

lemon zest (optional)

parsley (optional)

marjoram or thyme (optional)

Directions

Mix the eggs, milk, salt and spices. Set aside.

Heat a skillet, add the olive oil and sautee the onions, then add any other vegetables you plan to put in the quiche and sautee briefly.

Spread a small amount of the cheese in the bottom of the quiche crust, top with the sauteed vegetables, add more cheese, then pour the milk mixture over the top. Bake for 35-45 minutes at 375, depending on the wetness of the various vegetables included in the filling.

Notes

If using a 9" tart pan, use 3 eggs. If using a larger tart pan, use 4 eggs and more vegetables.
